At Ram and Sita’s lovely home in Jakarta, we were treated to a totally delicious breakfast which turned out to be super simple to make.
Soak a few tablespoons of chia seeds in coconut milk or water overnight.
Scoop out the flesh of a ripe avocado into a blender jar. Add about half a glass of coconut milk or coconut water along with the coconut flesh. Squeeze the juice of one lime into it and blend well. It should be dripping consistency, nice and thickish. Add some jaggery to sweeten if required.
Pour into a bowl. Fold in the chia seeds. Garnish with sunflower and watermelon seeds, granola, pine nuts and goji berries. You could add any other crunchy thing you like to the garnish.
Serve and eat right away!
